Autumn Greetings from South River Miso

Cooler temperatures and colorful fall leaves grace the Northeast landscape where South River Miso is made. As the season changes in many parts of the country, our thoughts turn to warming and appetizing meals. Miso is the perfect healthy seasoning for dishes made with the abundant fall harvest of grains, roots, and greens.

Enjoy miso in soups, stews and stir fries as well as in marinades that tenderize and flavor fish and meats. Unpasteurized South River Miso is rich in naturally occurring probiotics and enzymes that aid in digestion and help to build strong immunity through the winter months.

Quinoa Stir Fry



Enjoy this delicious quinoa stir fry by itself or accompanied by a salad, meat, or tofu. It's light and yummy! Quinoa is high in protein, minerals and anti-oxidants and is gluten free.

Serves four

Ingredients

1 cup quinoa
3 tbsp Chick Pea Miso (or use Sweet White or any of the One Year varieties)
½ cup chopped red or white onion
½ chopped cup carrots
3 cloves garlic
¼ cup minced scallions
2 tbsp organic extra virgin olive oil
1 ½ tsp curry powder
¼ cup minced cilantro
1 tsp minced ginger
Pinch of fresh minced hot pepper or dried red pepper flakes


Directions:

1. Rinse 1 cup of quinoa thoroughly. Boil 1 ¾ cups of water and stir in quinoa. Allow to return to a boil and reduce heat to warm. Cover and simmer for 15 minutes. Turn off heat and let quinoa sit covered for 5 minutes. Uncover and fluff with fork.

2. Cut onions and carrots into small cubes. Mince cilantro, ginger, scallions, hot pepper, and press or mince garlic. Dilute miso with 1 ½ tbsp of water in a small bowl.

3. Heat olive oil in large pan on high. Once oil is hot, add finely minced or pressed garlic. Then add carrots, onions, and half of the scallions, cilantro, ginger, curry powder, and diluted miso. Stir constantly for 2-3 minutes.

4. Add cooked quinoa and stir constantly for 1 minute. Add the remaining portions of ginger, scallions, cilantro, curry powder, and diluted miso. Add a pinch of hot pepper. Mix all ingredients evenly. Season with miso to taste if needed. Serve, and enjoy!
